Pie Moments Continued...

Easter is a time of celebration in our home, and what celebration would be complete without PIE! I was overwhelmed with the two pie selections: a cheesecakeish pie and coconut cream pie. Both were outstanding, but what I liked about the coconut was the fact that the base filing was slightly frozen. It gave it a little texture that I enjoy, like a thicker smoothy-type dessert.

My diet has been putting pie in check, due to cholesterol issues, but a little pie once in a while is a good thing!
